Location and History
Champagne Nowack is located at Rue Bailly 10 in Vandières, in the Vallée de la Marne in the Champagne region of France. The Nowack family put down roots there in the late 18th century. For several generations, they have produced and marketed Champagne under the name Nowack; today the estate is associated with Frédéric and Flavien Nowack.
Vine Growing
The grapes are hand-harvested and not purchased in. The estate has been certified as organic since 2016. Around 75 percent of the vineyard area is planted with Pinot Meunier; the remaining share is made up of Chardonnay and Pinot Noir.
Plots and Cellar Work
Since Flavien Nowack joined the family business, the work has increasingly focused on organic winegrowing, individual plots, as well as bottlings from a single plot and a single vintage. Selected plots are vinified separately in order to bring out differences between the sites in Vandières. For some wines, a Perpetual Reserve system is used in a 50-hectolitre oak cask; certain cuvées are topped up after each vintage with a portion of the new harvest. Some cuvées ferment with their own yeasts, including the yeast for the second fermentation in the bottle.
Champagne Style
The range includes Brut Nature and Extra Brut Champagnes, including single-variety and plot-specific cuvées. The Cuvée Carte d'Or combines Pinot Noir, Pinot Meunier and Chardonnay in equal proportions and is classified as Brut.
