Champagne Chavost in Chavot-Courcourt
Champagne Chavost is the brand of the wine cooperative of Chavot-Courcourt. The cooperative is located at 16 Rue d’Ilbesheim in Chavot-Courcourt in France and is part of the Coteaux Sud d’Épernay sector in Champagne.
Cooperative and vineyards
The cooperative was founded in 1946 by 20 winegrowers. Its members cultivate around 70 hectares of vines, mainly on the slopes around Chavot-Courcourt. The cooperative’s own 5.5-hectare vineyard area was converted to organic farming; the conversion was completed in 2022, and certification took place in 2023.
Champagne styles and grape varieties
Champagne Chavost produces sparkling wines of the Champagne appellation, including cuvées such as Brut Nature with no dosage, Blanc de Noirs, Blanc de Blancs and Rosé. The documented wines are made from Chardonnay, Pinot Meunier and Pinot Noir. Fabian Daviaux has been cellarmaster since 2019.
Rosé de Saignée Brut Nature
The Chavost Rosé de Saignée Brut Nature NV [2019] comes from clay-limestone soils in Chavot-Courcourt and consists of 67 % Pinot Meunier and 33 % Pinot Noir. The cuvée undergoes spontaneous alcoholic and malolactic fermentation, matures in French oak and is made without fining, filtration or added sulphites. The product range without added sulphites was first released in 2021.
