Documented wines and vinification

A Silvaner from the Dettelbacher Sonnenleite is documented as a dry German Prädikatswein (Kabinett). The grapes are destemmed and crushed, briefly macerated and fermented, gently pressed, clarified and fermented at 14 to 17 °C in stainless-steel tanks. A documented Domina is a dry German Qualitätswein as a red wine; for this, selected grapes are destemmed and crushed before the must ferments for more than 20 days in open wooden vats.
