Location and classification
GIPS is located in Stuttgart-Untertürkheim in the wine-growing region Württemberg. The vineyard site is assigned to the winery Aldinger, based in Fellbach, and classified as VDP.GROSSE LAGE®.
Site and soil
The south- to south-west-facing site is located at 240 to 320 metres above sea level. Its slope angle is 10 to 30 percent; the soil is classified as Gipskeuper. The VDP-classified area covers 6.63 hectares.
History and ownership
The name GIPS refers to gypsum deposits that were discovered at the site and were previously quarried there. Winery Aldinger acquired the Untertürkheim site in 1973 and resumed winegrowing there from 1974. The winery describes GIPS as a monopoly site in its sole ownership.
Grape varieties and vinification
The classified site lists Riesling, Weißburgunder, Chardonnay, Spätburgunder and Trollinger. For the dry 2023 Weißburgunder from Untertürkheim Gips, spontaneous fermentation took place at 17 to 22 °C; ageing on full lees continued until the beginning of April, with ripening to 15 percent in stainless steel tanks and to 85 percent in French oak. The dry 2023 Chardonnay was fermented spontaneously in French oak, aged on the lees until mid-March, and matured for twelve months in barriques.
