Location and classification
Dachs is a vineyard site in Wiebelsberg, a district of Oberschwarzach in the wine region Franken. In the official Bavarian vineyard register, it is listed as Wiebelsberg Dachs in the wine panorama Steigerwald and in the Großlage Steige.
Terrain and soil
The site faces south. The upper part is steep beneath a protective forest, while the lower sections have gentler slopes. The vines grow on heavy Keuper soil. The Wiebelsberger wine-growing area associated with Dachs covers around 25 hectares; the slopes were newly planted in 1980.
Grape varieties and wine styles
From Wiebelsberger Dachs, Silvaner, Spätburgunder and Domina are documented. A 2022 Silvaner is designated as a dry Deutscher Qualitätswein Franken and Erste Lage, and is described as having floral, spicy and mineral notes, with a peppery finish. A 2022 Domina is a semi-dry wine and is aged in stainless steel.
Cultivation and ageing
The 2023 Spätburgunder from Weingut Bäuerlein is produced according to Bioland guidelines without synthetic-chemical plant protection products and mineral fertilisers; a diverse vegetation cover serves as ground cover. The wine is matured in barrique and tonneaux casks. Winzer Sommerach selects grapes for its wines from Wiebelsberger Dachs according to detailed quality requirements and is certified to the sustainability standard FAIR'N GREEN.
