Champagne Salmon has its official address at 21–23 rue du Capitaine Chesnais, 51170 Chaumuzy, France. The winery is located in the Champagne; the grape varieties are, according to the estate, in the Vallée de l’Ardre.

History and viticulture

The history of the winery spans three generations in Chaumuzy. In 1958, Michel Salmon produced the first 500 bottles of Champagne Salmon. Olivier Salmon joined the business in the 1980s and continued the tradition as a Récoltant-Manipulant.

The winery cultivates 10 hectares of vines and applies sustainable farming practices. The soils are described as clay-limestone; in addition, flint is present, which contributes to mineral characteristics.

Grape varieties and cuvées

Pinot Meunier accounts for 85 percent of the vineyard area. In addition, Champagne Salmon works with Chardonnay and Pinot Noir. The winery explains that Pinot Meunier is more resistant to frost and buds later than the other important grape varieties.

The range includes cuvées made from several grape varieties, as well as bottlings made from 100 percent Pinot Meunier. The Cuvée Sélection Brut consists of 50 percent Meunier, 25 percent Chardonnay and 25 percent Pinot Noir and has a dosage of 9 g/l. The 100% Meunier Brut contains only Pinot Meunier and has a dosage of 7 g/l.

Special bottlings and cellar

The 100% Meunier Brut Rosé contains 20 percent macerated rosé wine and 5 percent red Meunier wine and has a dosage of 7 g/l. The Special Club 2015 is made from 70 percent Meunier and 30 percent Chardonnay, without a dosage; the Special Club Rosé 2015 is produced from 100 percent Meunier and is also bottled without a dosage.

Champagne Salmon is a member of the Club Trésors de Champagne and describes itself as a Vigneron indépendant. The estate includes, among other things, a press, a fermentation room, facilities for riddling, disgorging and fitting out, as well as vaulted cellars.
