Champagne Diebolt-Vallois in Cramant
Champagne Diebolt-Vallois is based in Cramant on the Côte des Blancs in Champagne. The Diebolt family has been established there since the late 19th century. The name Diebolt-Vallois has been used since 1978, when Jacques Diebolt entered the Vallois family through his marriage to Nadia Vallois.
Vineyards and grape varieties
The vineyards are located mainly in Cramant, classified as Grand Cru, and in Cuis, classified as Premier Cru. Further plots are in Chouilly, on the Coteaux d’Épernay, in the Montagne de Reims and on the Côte des Bar. Viticulture follows the principles of lutte raisonnée with a minimum of treatments. Chardonnay is the most important grape variety; outside the Côte des Blancs, Pinot Noir and Pinot Meunier are also grown.
Champagne and cellar work
The winery produces Blanc de Blancs made from Chardonnay, including vintage and non-vintage cuvées. The prestige cuvée is a pure varietal Blanc de Blancs from Grand-Cru sites in Cramant, Chouilly, Oger and Le Mesnil-sur-Oger. It is vinified in temperature-controlled stainless-steel tanks, while reserve wines are kept in foudres, and it matures for four years on the lees in the winery cellars before disgorgement.
Selected cuvées
The Millésime 2018 is entirely made from Chardonnay, is vinified in temperature-controlled stainless-steel tanks and matures for five years on the lees. The cuvée Fleur de Passion is vinified in wooden barrels and produced without malolactic fermentation.
