Location and context
Wolfer is a single vineyard in the Markgräflerland area of the wine-growing region Baden. The official demarcation includes the districts of Blansingen and Kleinkems in the municipality of Efringen-Kirchen.
Soil and cultivation
The site has limestone with a loess layer. In Blansingen’s Wolfer there are steep vineyard plots. For cultivation, ecological care and diverse ground cover between the rows of vines are documented, including legumes, mallows, oil radish and bee pasture plants.
Grape varieties and wine styles
Under the designation Blansinger Wolfer, wines made from Chardonnay, Weissburgunder, Riesling, Regent, Prior and Cabernet Blanc are documented. These include dry Qualitätswein, dry Kabinett, gently off-dry Kabinett, dry Spätlese, as well as dry wines from fungus-resistant grape varieties.
History and vinification
Blansingen was mentioned in a historical description around 1740 as being known for the wine Wolfer. A Muscateller from steep parcels is hand-harvested. The documented vinification includes 28 hours of maceration time, pressing, cool fermentation and yeast ageing in a stainless-steel tank; part of the berries are fermented in the tank for stronger aroma extraction.
