Grape varieties and wines

A documented Chardonnay is a dry site wine; the 2023 vintage has 12 % alcohol. For Chardonnay from certain parcels, limited harvest quantities are stated.
Maturation
The documented Sonnenbichl Chardonnay is made using whole-bunch pressing and spontaneous fermentation. Maturation takes place for 16 to 18 months on full lees in a 600-litre barrel as well as in tonneaux and barriques. The wine is lightly sulphured, bottled unfiltered and not clarified.
