Location and climate
The Schäf vineyard is connected to Auggen and lies in the foothill zone of the southern Black Forest. Another entry for Schäf is Steinenstadt, a district of Neuenburg am Rhein. The wine-growing climate is shaped by the Burgundian Gate, through which south-westerly winds bring Mediterranean air masses into the southern Upper Rhine plain.
Soil and grape variety
For Schäf, calcareous slate soils are given. The historical description of the site names Gutedel as the predominant planting.
Wine and vinification
A wine referred to as Auggener Schäf is a dry white Gutedel quality wine from Baden, the Markgräflerland. Production takes place with cool fermentation at around 12 °C over up to eight weeks.
Cultivation
The Schäf and Letten vineyard sites lie in a water protection area. The producer documents the omission of insecticides and the use of pheromones to disrupt mating.
