Location and geology
Peterstirn is a vineyard site on the east side of Schweinfurt, directly above the Main. The vineyard takes up a high, steep and south-facing spur of land. As geological subsoil, Muschelkalk has been documented; the site belongs to the wine-growing region Franken.
History and winegrowing
The vineyard site is linked to a historic castle site on the spur above Schweinfurt. The castle has been documented since the Middle Ages, while the area is used today as a vineyard. After a phase of decline in winegrowing in Schweinfurt, Peterstirn was replanted for commercial winegrowing from the 1980s onwards. Peterstirn is listed as a named wine site in the official Bavarian wine site directory for Schweinfurt and, at Weingut Dahms, is counted among the steep-slope vineyards.
Grape variety and vinification
Silvaner has been documented from the site and is regarded as the most important grape variety in the vineyards of Schweinfurt. A documented Peterstirn wine is a dry Silvaner Kabinett in the Franconian quality system. This Silvaner is hand-harvested, fermented under controlled cool conditions and kept on the full lees until bottling.
