Grape varieties and wine styles
From Königsberg, wines made from Merlot and Lemberger are documented. In addition, a red wine is produced from the PIWI grape varieties Cabernet Cantor, Cabernet Cortis and Piroso, as well as a white wine from Sauvignonac. The range includes dry red wine, rosé and white wine, each as German Qualitätswein.
Vinification
La Bestia Negra and Merlot are fermented with the must, biologically deacidified and matured over a longer period; the Merlot is also hand-picked and selected. Sauvignonac is fermented in a stainless steel tank. The Lemberger rosé has its yield reduced, is hand-picked, fermented cold, with fermentation stopped by cooling, and is then matured in a stainless steel tank.
