Winemaking

For a documented Spätburgunder, the grapes were hand-harvested at 90 °Oe, sorted, de-stemmed and cold macerated for five days. Spontaneous fermentation took place in 500-litre barrels from a second filling; afterwards, the wine matured for 18 months and was bottled without filtration. The documented Spätburgunder rosé was hand-harvested, transported in small containers, fermented spontaneously and temperature-controlled in stainless-steel tanks, and aged on the gross lees and then on the fine lees in stainless steel.
