Location and classification
Fuchs is an officially registered single vineyard site in the municipality and the cadastral district of Saarburg. It belongs to the Großlage Scharzberg in the winegrowing region Mosel. In the vineyard sites directory, Fuchs is listed under number 460246; the planted area is given there as 7.3 hectares.
Topography and soils
The site is described as a steep vineyard location. A documented area within Saarburger Fuchs is oriented to the south-west and is very steep. The subsoil consists of blue Devonian slate. In the vineyard, old vines with their own roots are documented in places.
Grape varieties and wines
Riesling and Spätburgunder are documented for Saarburger Fuchs. The documented Riesling is made dry and has 11 to 12 percent by volume of alcohol. A described Spätburgunder was produced as a dry, unfiltered red wine; the vines stated for this were about 40 years old in the 2020 vintage.
Cultivation and vinification
According to the winery Cantzheim, vines over 80 years old were saved in Saarburger Fuchs; the winery harvests there since 2016. The Fuchs wines undergo spontaneous fermentation; the Riesling ripens from the must stage to bottling predominantly in oak barrels. For the documented Spätburgunder, the maceration time was three weeks; 80 percent of the grapes were destemmed and 20 percent were processed as whole grapes. Afterwards, the wine matured in used and new tonneaux and was filled unfiltered.
