Location and Climate
Domherr is a vineyard site in Iphofen in Franconia, Germany. The south-facing location is described as a new vineyard site. Iphofen lies in the Maingau climate zone with an average annual temperature of about 7.5 to 8 °C and around 600 mm of annual rainfall.
Soil
The site has a heavy, clay-rich Keuper soil. For the Iphöfer Domherr, dark marl and rock components are also documented, as well as a pronounced ability of the soils to store heat.
Cultivation
Iphöfer Domherr is in the sole ownership of the Juliusspital winery. For production, deliberately limited yields, care of the soil and the preservation of an intact vineyard ecosystem are documented.
Wine and Maturation
For the site, Müller-Thurgau bottlings from Juliusspital from the years 2018, 2022 and 2024 are documented. These include semi-dry wines from the years 2018 and 2022, as well as a dry vintage from 2024 with notes of apple and citrus and a balanced ratio of sweetness and acidity. A Müller-Thurgau from Iphöfer Domherr is designated as German Quality Wine from the Qualitätswein (quality wine-growing) region of Franconia. The grapes are handled gently and pressed carefully. The subsequent slow, cool fermentation takes place at about 16 to 18 °C; afterwards, the wine matures on fine lees in a stainless-steel tank.
