Daubhaus

Location and classification

Daubhaus is a registered single vineyard site in the municipality of Appenheim in the Bingen area and within the Großlage Abtey of the wine-growing region Rheinhessen. According to the Wine Site Directory Rhineland-Palatinate 2024, the vineyard area covers 76.9 hectares. The vineyards lie at about 180 to 260 metres above sea level and are oriented to the north-east and south-east.

Soil and origin of the name

The regional wine site profile lists loess and pararendzina as the soil type. It describes calcareous materials deposited by the wind, with deep, light-coloured loam and clayey silt. A technical data sheet for a Daubhaus Spätburgunder cites calcareous loess with inclusions of chalk. The name Daubhaus is derived from Taubenhaus (pigeons’ loft) and is associated with the shelters of the vineyard caretakers as well as the historical connection between pigeon coops and noble privileges.

Grape varieties and wine styles

Spätburgunder, Weißer Burgunder and Sauvignon Blanc are documented for Daubhaus. A Spätburgunder is described as a dry red wine with a light body, an elegant expression and spicy and cassis-like notes. Dry white wines from Daubhaus include Weißer Burgunder and Sauvignon Blanc; the documented Sauvignon Blanc comes from Daubhaus and Drosselborn.

Work in the vineyard and vinification

For a Daubhaus Spätburgunder, selected shoots were removed in May, a green harvest was carried out in August, and healthy, fully ripe grapes were selectively harvested. The yield was reduced to about 7,000 litres per hectare. After gentle processing and around 17 days of maceration time, traditional fermentation took place in open vats, followed by biological acid reduction and maturation in large wooden casks.

A Sauvignon Blanc, partly originating from Daubhaus, was selectively harvested, gently pressed, and spontaneously fermented, then matured in stainless steel and wood before being bottled.
