Location and landscape
Dachsteiger is a single vineyard site around Heuholz near Pfedelbach in the Ohrn valley between Pfedelbach and Untersteinbach in Württemberg. The vineyards are situated on hilly, undulating and sunny slopes above the Heuholz district.
Soil and climate
The vineyards are associated with deep, heavy Keuper soils. For Heuholz, a mild climate in the fog-free Ohrn valley is described. The name Dachsteiger refers to the shape of a vineyard that resembles a roof.
Wines and grape varieties
Documented wines from Dachsteiger include, among others, Riesling, Traminer, Lemberger, Trollinger, Spätburgunder, Grauburgunder, Weißburgunder, Muskateller, Dornfelder, Acolon and Samtrot. The range includes dry, extra-dry, off-dry, sweet and dessert-style wines, as well as Qualitätswein, Kabinett, Spätlese, Auslese and Eiswein. White and red wines are documented, as well as rosé and Schiller wines.
Viticulture and vinification
In Heuholz, winegrowing has been documented for centuries. For Dachsteiger Élegance wines, the grapes are hand-harvested and selected manually. Depending on the wine, the documented cellar methods include ageing in large, old wooden casks, a year of maturation in new 225-litre barriques, or storing a Riesling Kabinett on fine lees.
