Location and Classification
The Bünauer Berg, officially listed as Tultewitzer Bünauer Berg, is a single-vineyard site in the Saale-Unstrut wine-growing region. It belongs to the cadastral district of Schieben in the city of Naumburg and lies at 51.09379° north latitude and 11.69961° east longitude.
Terroir and Area
The south-easterly facing slopes have gradients of about 10 to 30 per cent. The substrates documented include shell limestone, loess and loess loam, glacial till and flint. As of 31 December 2024, 4.6598 hectares of vineyard area were recorded.
Vines and Wines
The Thüringer Weingut Zahn re-discovered and replanted the site in 2011. For the Tultewitzer Bünauer Berg, Weißburgunder and Grauburgunder are documented as grape varieties; in addition, Kernling was bottled as a site wine. The wines include dry quality wines, delicately off-dry late harvests and noble-sweet select harvests.
Winemaking
Documented wines from the site were produced using a longer maceration time, gentle pressing, cool fermentation at about 15 to 18 °C and short lees ageing. Stainless steel was used, as well as large wooden barrels for individual wines. The latitude 51 bottlings of Weißburgunder and Grauburgunder were fermented in barrique or further aged in wooden casks.
