For the Würzburg Pfaffenberg, Silvaner, Riesling, Grauburgunder (Pinot Gris), Weißburgunder (Pinot Blanc), Chardonnay and Spätburgunder (Pinot Noir) are listed as classified grape varieties.

Documented wine

The Bürgerspital Würzburger Pfaffenberg Silvaner of the 2024 vintage is designated as a dry white quality wine and VDP.ERSTE LAGE. The wine is described as having fine herbal aromas and a multi-layered profile. For this Silvaner, spontaneous fermentation in wooden casks and maturation on fine lees in wood are documented. The vines come from a steep site; the oldest Silvaner vines there were planted in 1971.
