Location and viticulture
Ebringen is a wine-growing municipality south of Freiburg in the Markgräflerland on the western edge of the foothills of the Black Forest. The municipality belongs to the wine region Baden. The Sommerberg is a small western extension of the Schönberg above Ebringen. Its vineyards lie at around 270 to 320 metres above sea level and include areas oriented west, south and south-southwest.
Climate
For the period 1991 to 2020, an average annual temperature of 11.9 °C, annual precipitation of 922.9 mm and an average sunshine duration of 1,827.4 hours were determined in Ebringen. On average, there were 69.7 summer days per year with at least 25 °C and 20.3 hot days with at least 30 °C. The summer months are wetter than the winter months; in the long-term average, July receives about 4.6 times as much sunshine as December.
Soils and grape varieties
The soils of the Sommerberg consist of moderately calcareous loess loams or clay loams. Some parts have marl, calcareous weathering residues and a high proportion of stones; layers of clay and marl may extend from the subsoil up into the topsoil. In Ebringen, Gutedel, Müller-Thurgau, Weißburgunder, Spätburgunder, Chardonnay and fungus-resistant white and red varieties are documented. Gutedel and Müller-Thurgau are regarded as traditional varieties, while the cultivation of Pinot varieties is increasing.
History and cellar work
A deed of gift from the years 716 to 721 mentions Ebringen and a vineyard and provides evidence that viticulture in the place dates back already to the early eighth century. Since 1971, the Ebringen vineyards have been grouped together under the name Sommerberg, based on a historical account. Documented cultivation includes hand work from winter pruning and bending the canes through yield regulation and hand-harvesting of selected grapes. White wines ferment spontaneously and single-vineyard wines are matured in 500-litre tonneaux; Spätburgunder undergoes spontaneous whole-bunch must fermentation and matures for at least one year in barriques.
