Location and landscape
The Kostheimer St. Kiliansberg is located in Wiesbaden-Kostheim within the wine-growing region Rheingau and belongs to the collective vineyard site Daubhaus. The site is described as a larger vineyard hill and slope; at its highest point there is a winery. Wiesbaden is the associated town district.
Soils and grape varieties
The soils consist of clayey, calcareous marl. For cultivated plots, loess over calcareous marl with sandy loam is also described. For wines labelled St. Kiliansberg, Riesling and Spätburgunder are documented.
Wine style and ageing
The site is associated with aromatic, full-bodied wines as well as pronounced freshness and mineral acidity. Documented site-specific bottlings include dry Riesling, dry Spätburgunder and a dry rosé sparkling wine. Documented ageing practices include spontaneous fermentation, ageing in wooden casks and, for selected wines, ageing in barrique.
Name and sparkling wine
The name refers to Saint Kilian, described as the patron saint of Franconian timber raftsmen. They built rafts at the mouth of the Main and settled there. A rosé sparkling wine from the St. Kiliansberg is produced using traditional bottle fermentation and matures in the vault cellar of the Bacchus Speicher.
