Location and Classification
The Bishop’s Throne (Bischofsstuhl) is an officially listed single vineyard in Cochem. It lies in the cadastral municipality of Sehl, in the sector Burg Cochem and in the Großlage Goldbäumchen in the wine-growing region Mosel. In the official vineyard register, the site is listed under the wine-growing site code 440102.
Topography and Climate
The site farmed by Kloster Ebernach is described as a steep-slope site within the terraced Mosel landscape. Access is via an ascent from the Cochemer Sonnenberg area. A cool microclimate ensures a long ripening period; the vineyard plot lies close to a forest on the upper slope, where cooler nights slow down ripening and help preserve the acidity.
Grape Variety and Wine Styles
For the Cochem Bischofsstuhl, Riesling is documented. The documented wine styles include Riesling Spätlese, sweet, Riesling Auslese, sweet and Riesling Qualitätswein, sweet.
Farming and Winemaking
Kloster Ebernach describes the Cochem Bischofsstuhl as a monopole vineyard and documents work on vine training there. For a documented Bischofsstuhl Riesling, the grapes are hand-harvested and selected, de-stemmed, macerated on the skins for about six hours, gently pressed and fermented in stainless-steel tanks. The soil is described as stony. At Kloster Ebernach, wine has been produced since 1673; the Bischofsstuhl is one of the historical wine sites there.
