Champagne J. Lassalle
The winery Champagne J. Lassalle was founded in 1942 in Chigny-les-Roses. For its vineyard areas, it describes a loamy-limestone terroir. The winery works with reasoned viticulture and is committed to preserving biodiversity in the vineyard and the surrounding ecosystem.
Cellar working methods
Champagne J. Lassalle harvests by hand and carries out selective sorting of the grapes already in the vineyard. Pressing takes place with low pressure in a traditional press with a capacity of 4,000 kilograms; for the wines, only the cuvée fraction is used. The bottles mature for around four years without a vintage and up to ten years in vintage wines on the lees. Riddling is done by hand for about three weeks on riddling racks, with finishing using a Brut dosage.
