Varieties and maturation
Chardonnay and Elbling are documented for Nittel’s Blümchen. One winery describes an old Elbling vine stock there, which was planted by hand in 1962 and today yields reduced crop levels. From this stock, Elbling is offered as a Spätlese.
Elbling Spätlese
The grapes for the documented Elbling Spätlese were picked fully ripe and without botrytis, pressed as whole grapes and spontaneously fermented.
