About the winery
Location and vineyard sites
Philipp Jaillet is based in Ruppertsberg in the Pfalz in Germany. The vineyards extend from Haardt to Deidesheim and also include areas in Königsbach and Leistadt. The managed sites include Heidböhl and Ölberg-Hart in Königsbach, Einstal in Deidesheim, Herrenmorgen in Leistadt as well as Herzog in Haardt. The vineyard landscape lies between the foothills of the Vosges and the Rhine plain.
Climate and soils
The sites at Haardt describe the estate as warm, while the Deidesheim locations are considered cool. In Haardt, heavy limestone and clay soils shape the subsoil. Ruppertsberg is characterised by sandstone with bands of calcareous marl; Deidesheim by sandstone with fine limestone veins. According to the winery, the area was a coral reef around 20 million years ago.
Grape varieties and wine styles
The documented main grape varieties are Pinot Noir, Chardonnay and Riesling. Around 59 percent of the vineyard area is devoted to Pinot Noir, 38 percent to Chardonnay and 3 percent to Riesling. This gives rise to both red and white wines.
Development and ageing
Philipp Jaillet began in 2016, during his viticulture training, with his own wine range and initially farmed 0.12 hectares. In the cellar, spontaneous fermentation, malolactic fermentation, full maturation in wood, extended lees ageing and unfiltered bottling are among the documented processes. At Von Winning, Philipp Jaillet is listed as deputy vineyard manager.
